There are five reasons why I think that these Strawberry Lemonade Cookies will become your favorite summer time treat:
1) They are so quick and easy to make.
2.) One batch makes 48 cookies. Making them the best dessert to bring along to a BBQ.
3.) They will impress everyone that you know.
4.) They are refreshing. And moist. Oh, they are so so moist.
5.) They are simply a stunning cookie.
1 Strawberry cake mix
1 Lemon cake mix
2 Tsp lemon juice
2/3 Cup oil
1 Cup powdered sugar
1 1/2 Cups powdered sugar
1/4 Tsp vanilla extract
5 to 5 1/2 tsp milk
First get 2 large bowls. Pour the strawberry cake mix into one and the lemon into another. Next add 1/3 cups+ 2 tsp of the oil to the strawberry mix and the rest of the oil+lemon juice into the lemon mix. Lastly, add 2 eggs to each mixture and mix them until well combined. Cover each bowl with plastic wrap and refrigerate for 20 minutes.
After the mixtures have firmed up preheat the oven to 375 degrees. While that’s warming up take a tsp of each mixture and roll them together. Then roll the ball into some powdered sugar and set on an ungreased cookie sheet.
Bake them for 9-11 minutes. They may seem a little under done, but they bake longer as they sit. After five minutes transfer them to a cookie sheet.
Keep doing this until all the mixtures are gone. For some reason I always end up with more strawberry dough left than lemonade.
While the cookies are cooling whip up a quick batch of vanilla glaze to drizzle over the cookies. Simply combine the powdered sugar, vanilla and just enough milk until you reach your desired consistency.
All that there’s left to do is impress your family and friends with these delicious and beautiful Strawberry Lemonade Cookies.
P.S: I wanted to thank you all for the prayers as I went into surgery and while I’ve been recovering. The surgery went well and they removed all of the lesions and some scar tissue. I’m healing well and am very happy to be back in the kitchen.
